Morton’s starts with a USDA Prime-graded standing rib of beef from its Butcher Shop, then specially cuts it for “stuffing.” The roast is rubbed inside and out with a mixture of fresh rosemary, thyme and fresh garlic, then sautéed with black and pink peppercorns in clarified butter. Orange zest, candied ginger, sea salt and star anise are incorporated into the rub, for an Asian flair.
